Lecithin is a phospholipid that is an essential building block for the body's cell membranes. They are vital for normal function of the brain, blood, nerves and other tissues. When ingested it is further converted into choline which is a key component of the neurotransmitter acetylcholine. Unfortunately, most lecithins in products come from genetically modified soy that is heavily processed. Our sunflower lecithin is lightly processed and 100% non-gmo.
